- 1
In a medium bowl, combine the black beans and sweet corn, mixing them gently together.
- 2
Place two flour tortillas flat on a clean cutting board or counter.
- 3
Sprinkle half of the shredded cheddar cheese evenly over the two tortillas, leaving a small border around the edges.
- 4
Spoon the bean and corn mixture evenly over the cheese layer on both tortillas.
- 5
Top the filling with the remaining shredded cheddar cheese.
- 6
Place the remaining two flour tortillas on top of the filling to form two complete sandwiches.
- 7
Brush the top of each tortilla lightly with melted butter or margarine.
- 8
Heat a large skillet or griddle over medium heat.
- 9
Carefully place one quesadilla in the skillet, buttered-side down, and cook for 3 to 4 minutes until the bottom is golden brown and crispy.
- 10
Brush the top side of the quesadilla with butter, carefully flip it over, and cook for another 3 to 4 minutes until the cheese is completely melted.
- 11
Repeat the cooking process for the second quesadilla.
- 12
Remove the quesadillas from the skillet, let them cool for a couple of minutes, and cut each into four wedges using a pizza cutter.
- 13
Serve warm with mild salsa and sour cream on the side for dipping.
💡 Chef tips
- You can easily sneak in finely chopped spinach or grated zucchini into the cheese layer for extra nutrients without changing the flavor.
- Assemble the quesadillas ahead of time and store them in the refrigerator for up to 4 hours before cooking for a quick weeknight dinner.
- Leftover cooked quesadillas can be reheated in a dry skillet over medium heat to restore their crispy texture.
✅ How it should turn out
The finished quesadillas should have a golden-brown, crispy exterior with warm, gooey melted cheese and a flavorful bean and corn filling.
