Ingredients

  • •1 container plain whole milk yogurt (7 ounces / 200g)
  • •2 yogurt containers granulated sugar (260g)
  • •3 yogurt containers all-purpose flour (360g)
  • •1 yogurt container neutral oil like canola or sunflower oil (180ml)
  • •3 large eggs, at room temperature
  • •2 teaspoons baking powder
  • •1 teaspoon pure vanilla extract
  • •1/2 teaspoon fine sea salt
  • •Butter for greasing the pan

Instructions

  1. 1

Preheat your oven to 350°F (175°C) and thoroughly grease a 9-inch loaf pan or round cake pan with butter, then dust lightly with flour.

  2. 2

Empty the yogurt into a clean mixing bowl and wash and dry the yogurt container to use as your measuring tool.

  3. 3

Add the granulated sugar and eggs to the yogurt, and whisk vigorously until the mixture is pale, smooth, and slightly thickened.

  4. 4

Whisk in the neutral oil and the pure vanilla extract until fully incorporated.

  5. 5

In a separate bowl, whisk together the all-purpose flour, baking powder, and fine sea salt.

  6. 6

Gently fold the dry ingredients into the wet mixture using a spatula, stirring just until no pockets of dry flour remain and being careful not to overmix.

  7. 7

Pour the batter into your prepared baking pan and smooth the top with a spatula.

  8. 8

Bake in the preheated oven for 35 to 40 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean.

  9. 9

Allow the cake to cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.

💡 Chef tips

  • You can customize the flavor easily by adding the grated zest of one lemon or orange to the wet ingredients.
  • Store the cake wrapped tightly in plastic wrap at room temperature for up to 3 days, or freeze it for up to 2 months.
  • For the best texture, make sure your eggs and yogurt are at room temperature before you begin baking.

✅ How it should turn out

The finished cake has a golden-brown, slightly crisp crust with a tender, moist crumb and a delicate, comforting vanilla aroma.
