Ingredients

  • •1 container (150g or 3/4 cup) plain whole milk yogurt
  • •2 yogurt containers (250g) granulated sugar
  • •3 yogurt containers (240g) all-purpose flour
  • •1/2 yogurt container (100ml) neutral vegetable oil or melted unsalted butter
  • •3 large eggs
  • •2 teaspoons baking powder
  • •1 teaspoon pure vanilla extract
  • •1/4 teaspoon salt
  • •1 tablespoon powdered sugar for dusting

Instructions

  1. 1

Preheat your oven to 180°C (350°F) and thoroughly grease a 9-inch loaf pan or round cake pan with butter or oil.

  2. 2

Empty the yogurt into a clean mixing bowl, and rinse and dry the yogurt container to use as your measuring tool.

  3. 3

Add the sugar and eggs to the yogurt, and whisk vigorously until the mixture is pale, smooth, and slightly frothy.

  4. 4

Whisk in the vegetable oil or melted butter, along with the vanilla extract.

  5. 5

In a separate bowl, sift together the flour, baking powder, and salt.

  6. 6

Gently fold the dry ingredients into the wet mixture using a spatula, stirring just until combined and no lumps of flour remain, taking care not to overmix.

  7. 7

Pour the batter evenly into your prepared baking pan and smooth the top.

  8. 8

Bake for 35 to 40 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean.

  9. 9

Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

  10. 10

Dust lightly with powdered sugar before slicing and serving.
