Whole Herb Roasted Chicken
This classic whole roasted chicken is infused with aromatic herbs and garlic for a juicy, tender centerpiece with crispy golden skin.
Ingredients
- •1 whole roasting chicken (about 4 to 5 pounds), rinsed and patted completely dry
- •3 tablespoons extra virgin olive oil
- •1 tablespoon kosher salt
- •1 teaspoon freshly ground black pepper
- •1 tablespoon fresh rosemary, finely chopped
- •1 tablespoon fresh thyme leaves
- •1 tablespoon fresh sage, finely chopped
- •1 lemon, halved
- •1 head garlic, halved horizontally
- •4 sprigs fresh rosemary
- •4 sprigs fresh thyme
Instructions
- 1
Preheat your oven to 425°F (220°C) and place a rack in the lower middle position.
- 2
In a small bowl, mix together the extra virgin olive oil, chopped rosemary, chopped thyme, chopped sage, kosher salt, and black pepper to form a fragrant herb paste.
- 3
Place the chicken breast-side up in a roasting pan or a large cast-iron skillet.
- 4
Stuff the chicken cavity with the lemon halves, garlic halves, and the extra herb sprigs.
- 5
Tuck the wings underneath the chicken and tie the legs together with kitchen twine for even cooking.
- 6
Rub the herb paste all over the outside of the chicken, ensuring it is thoroughly coated.
- 7
Roast in the preheated oven for 75 to 85 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C) and the juices run clear.
- 8
Remove the chicken from the oven and let it rest undisturbed for 15 minutes before carving and serving.
💡 Chef tips
- For the crispiest skin possible, let the salted chicken air-dry uncovered in the refrigerator for a few hours or overnight before roasting.
- You can toss baby potatoes and carrots into the bottom of the roasting pan to cook right alongside the chicken in the savory drippings.
- Store leftover shredded chicken in an airtight container in the refrigerator for up to 3 days.
✅ How it should turn out
The finished chicken features beautifully golden, ultra-crisp skin, juicy and succulent meat infused with garlic and herbs, and a deeply savory aroma.
