Spinach and Cheese Stuffed Chicken Breast
Tender chicken breasts stuffed with a flavorful dairy-free spinach and garlic mixture for a juicy and impressive dinner.
Ingredients
- •4 large boneless, skinless chicken breasts
- •2 cups fresh spinach, chopped (60g)
- •4 tablespoons dairy-free cream cheese or pareve ricotta (60g)
- •2 cloves garlic, minced
- •1 teaspoon dried oregano
- •1 teaspoon paprika
- •2 tablespoons olive oil (30ml)
- •Salt and freshly ground black pepper to taste
Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- 2
In a small bowl, mix together the chopped spinach, dairy-free cream cheese, minced garlic, oregano, salt, and pepper until well combined.
- 3
Using a sharp knife, cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through to the other side.
- 4
Stuff each chicken pocket evenly with the spinach and cheese mixture, and secure the openings with toothpicks if needed.
- 5
Rub the outside of each stuffed chicken breast with olive oil, then season generously with paprika, salt, and black pepper.
- 6
Heat an oven-safe skillet over medium-high heat with a drizzle of olive oil, and sear the chicken breasts for 3 to 4 minutes per side until golden brown.
- 7
Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
- 8
Remove the chicken from the oven, let it rest for 5 minutes before slicing, and serve warm.
💡 Chef tips
- Make sure not to overstuff the chicken breasts so the filling does not leak out during cooking.
- You can assemble the stuffed chicken breasts a few hours in advance, cover, and keep them in the refrigerator until ready to sear and bake.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently.
✅ How it should turn out
The finished chicken is golden and crispy on the outside, incredibly juicy on the inside, with a savory, garlicky spinach filling.
