Homemade Greek Gyros
Experience the authentic taste of street-style Greek gyros with succulent, herb-marinated pork and creamy homemade tzatziki tucked into warm pita bread.
Ingredients
- •1.5 lbs (700g) pork shoulder, sliced into thin strips
- •3 tablespoons olive oil
- •2 tablespoons red wine vinegar
- •3 cloves garlic, minced
- •1 tablespoon dried oregano
- •1 teaspoon smoked paprika
- •1 teaspoon ground cumin
- •1 cup Greek yogurt
- •1 large cucumber, grated and squeezed dry
- •2 tablespoons fresh dill, chopped
- •4 large pita breads
- •1 red onion, thinly sliced
- •2 tomatoes, diced
- •Salt and black pepper to taste
Instructions
- 1
In a large bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, paprika, cumin, salt, and pepper to create the marinade.
- 2
Add the pork strips to the bowl, toss to coat thoroughly, and let it marinate for at least 30 minutes at room temperature.
- 3
While the meat marinates, combine the Greek yogurt, grated cucumber, and fresh dill in a small bowl; season with salt and set aside in the refrigerator.
- 4
Heat a large cast-iron skillet or griddle over medium-high heat. Add the pork strips in a single layer, working in batches if necessary to avoid overcrowding.
- 5
Sear the pork for 5-7 minutes, turning occasionally, until the edges are crispy and charred and the meat is cooked through.
- 6
Warm the pita breads in the oven or on a dry skillet for 1 minute per side.
- 7
Assemble the gyros by spreading a generous spoonful of tzatziki on each pita, topping with the crispy pork, sliced onions, and diced tomatoes, then rolling tightly to serve.
💡 Chef tips
- For extra tender meat, marinate the pork in the refrigerator for up to 4 hours before cooking.
- If you prefer a lighter version, you can substitute the pork shoulder with thinly sliced chicken breast or thighs.
- To keep the pita soft, wrap them in a clean kitchen towel immediately after heating until you are ready to assemble.
✅ How it should turn out
The finished gyros should feature golden-brown, crispy-edged meat that is juicy and aromatic, perfectly balanced by the cooling, garlicky tzatziki and fresh vegetables.
