Greek Honey Almond Cake
A moist, fragrant, and naturally gluten-free almond cake soaked in a spiced honey syrup that captures the essence of Mediterranean sunshine.
Ingredients
- •2 cups almond flour (200g)
- •3 large eggs, separated
- •1/2 cup granulated sugar (100g)
- •1/2 cup extra virgin olive oil (120ml)
- •1 teaspoon vanilla extract
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon salt
- •1/2 cup honey (170g)
- •1/4 cup water (60ml)
- •1 strip lemon peel
- •1/4 cup sliced almonds for garnish
Instructions
- 1
Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with a little olive oil.
- 2
In a large bowl, whisk the egg yolks with the sugar until pale and creamy, then slowly whisk in the olive oil and vanilla extract.
- 3
Stir in the almond flour, cinnamon, and salt until a thick batter forms.
- 4
In a separate clean bowl, beat the egg whites until stiff peaks form, then gently fold them into the almond batter in two batches to keep it light.
- 5
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 6
While the cake bakes, combine honey, water, and the lemon peel in a small saucepan over medium heat; simmer for 5 minutes, then remove from heat and discard the peel.
- 7
Once the cake is out of the oven, poke holes over the surface with a skewer and pour the warm honey syrup evenly over the top.
- 8
Allow the cake to cool completely in the pan to absorb the syrup, then garnish with sliced almonds before serving.
💡 Chef tips
- For a deeper flavor, toast your almond flour in a dry pan over low heat for 2-3 minutes before using, watching carefully to prevent burning.
- This cake tastes even better the next day, as the honey syrup has more time to fully penetrate the almond crumb.
- Store the cake at room temperature in an airtight container for up to 3 days, or refrigerate for up to a week.
✅ How it should turn out
The finished cake should be golden brown with a moist, dense texture that smells of toasted nuts and citrusy honey, tasting rich and perfectly balanced in sweetness.
