German Currywurst
Experience the ultimate street food classic with pan-fried pork sausages smothered in a spiced, tangy tomato sauce and dusted with aromatic curry powder.
Ingredients
- •4 German bratwurst or pork bockwurst sausages
- •1 tablespoon neutral vegetable oil
- •1 small yellow onion, finely diced
- •1 clove garlic, minced
- •1 cup tomato passata or smooth tomato puree (240ml)
- •2 tablespoons tomato paste
- •2 tablespoons Worcestershire sauce
- •2 tablespoons apple cider vinegar
- •2 tablespoons brown sugar
- •1 teaspoon smoked paprika
- •1/2 teaspoon garlic powder
- •1/2 teaspoon onion powder
- •1/2 teaspoon salt
- •1/4 cup water or beef broth (60ml)
- •2 tablespoons mild curry powder (plus extra for dusting)
Instructions
- 1
Heat the vegetable oil in a medium saucepan over medium heat and sauté the diced onion until soft and translucent, about 4 minutes.
- 2
Add the minced garlic and cook for another minute until fragrant, making sure not to burn it.
- 3
Stir in the tomato paste, tomato passata, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and water.
- 4
Reduce the heat to low and let the sauce simmer gently for about 15 minutes, stirring occasionally until it thickens into a rich glaze.
- 5
Stir the 2 tablespoons of curry powder directly into the simmering sauce, cook for 2 more minutes, then remove from heat. For a completely smooth sauce, blend it with an immersion blender.
- 6
While the sauce simmers, heat a large skillet over medium-high heat with a touch of oil and pan-fry the sausages until golden brown and cooked through, turning frequently for about 8 to 10 minutes.
- 7
Remove the sausages from the heat and slice them crosswise into thick, bite-sized rounds.
- 8
Transfer the sliced sausages to serving plates or bowls, pour a generous amount of the warm curry sauce over the top, and dust liberally with additional curry powder right before serving.
💡 Chef tips
- Traditional Currywurst uses skinless pork sausages (Bratwurst), but you can substitute smoked sausages or chicken sausages if preferred.
- The curry sauce can be made up to three days in advance and stored in the refrigerator; simply reheat it gently on the stove before serving.
- Serve alongside crispy French fries (Pommes) and a dollop of mayonnaise for the authentic German Imbiss experience.
✅ How it should turn out
The finished dish features juicy, browned sausages coated in a glossy, sweet-and-tangy tomato sauce with a punchy aroma of warm curry spices.
