French Macarons
Delicate, almond-based meringue cookies with a crisp shell and a chewy center that melt in your mouth.
Ingredients
- •1 cup almond flour (100g), finely ground
- •1 3/4 cups powdered sugar (200g)
- •3 large egg whites (approx. 100g), room temperature
- •1/4 cup granulated sugar (50g)
- •1/2 teaspoon vanilla extract
- •1 pinch cream of tartar
Instructions
- 1
Sift the almond flour and powdered sugar together into a bowl, discarding any large almond chunks, and set aside.
- 2
In a clean, dry bowl, beat the egg whites with cream of tartar until foamy, then gradually add the granulated sugar while beating until stiff, glossy peaks form.
- 3
Gently fold the dry ingredients into the egg whites in three batches using a spatula, mixing until the batter flows like thick lava (the figure-eight test).
- 4
Transfer the batter into a piping bag fitted with a round tip and pipe small, uniform circles onto a baking sheet lined with parchment paper.
- 5
Tap the baking sheet firmly against the counter several times to release air bubbles, then let the macarons rest for 30-60 minutes until a dry skin forms on the surface.
- 6
Preheat your oven to 300°F (150°C) and bake for 15-18 minutes until the feet are set and the tops are firm.
- 7
Allow the cookies to cool completely on the baking sheet before removing and filling with your choice of ganache or buttercream.
💡 Chef tips
- Ensure your mixing bowl is completely free of grease by wiping it with a little lemon juice or vinegar before starting.
- The resting period is crucial; if the macarons are still tacky to the touch, let them sit longer to prevent cracking in the oven.
- Store finished macarons in an airtight container in the refrigerator for 24 hours before serving to allow the texture to mature and become perfectly chewy.
✅ How it should turn out
The finished macarons should have smooth, shiny tops, distinct ruffled feet at the base, and a delicate, almond-scented sweetness that is crisp on the outside and soft on the inside.
