Whole Oat Bread
Enjoy a hearty, rustic loaf filled with wholesome oats and a naturally nutty flavor that is surprisingly easy to bake at home.
Ingredients
- •2 1/2 cups whole wheat flour (300g)
- •1 1/2 cups rolled oats (150g), divided
- •2 1/4 teaspoons active dry yeast (one 7g packet)
- •1 tablespoon honey or maple syrup
- •1 1/2 teaspoons salt
- •1 1/3 cups warm water (320ml)
- •2 tablespoons olive oil
- •1 tablespoon warm water mixed with 1 teaspoon maple syrup for brushing
Instructions
- 1
In a large bowl, whisk together the whole wheat flour, 1 cup of the rolled oats, active dry yeast, and salt.
- 2
In a separate small bowl, combine the warm water, honey, and olive oil.
- 3
Pour the wet ingredients into the dry ingredients and stir until a sticky dough forms.
- 4
Turn the dough out onto a lightly floured surface and knead for about 8 to 10 minutes until it becomes smooth and elastic.
- 5
Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 1 hour or until doubled in size.
- 6
Punch down the dough gently, shape it into an oval loaf, and place it on a parchment-lined baking sheet or in a greased 9x5-inch loaf pan.
- 7
Brush the top with the maple-water mixture and sprinkle the remaining 1/2 cup of rolled oats evenly over the surface, pressing them down gently.
- 8
Cover and let rise for a second time for 30 minutes.
- 9
Preheat your oven to 375°F (190°C).
- 10
Bake the bread for 30 to 35 minutes, or until the loaf sounds hollow when tapped on the bottom and the crust is golden brown.
- 11
Transfer the bread to a wire rack and let it cool completely before slicing.
💡 Chef tips
- To make this bread vegan and pareve, use maple syrup instead of honey for the sweetener.
- Store the cooled bread in an airtight container at room temperature for up to 3 days, or slice and freeze it for up to 2 months.
- For extra texture, you can add 2 tablespoons of sunflower seeds or flaxseeds into the dry ingredient mixture.
✅ How it should turn out
The finished whole oat bread has a golden-brown, oat-crusted exterior, a dense yet tender crumb with a nutty aroma, and a deeply comforting, wholesome flavor.
