These creamy, fruit-filled popsicles are a healthy and refreshing treat that kids will absolutely love.
Ingredients
- •2 cups fresh strawberries, hulled and sliced
- •1 cup Greek yogurt (plain or vanilla)
- •3 tablespoons honey or maple syrup
- •1 teaspoon pure vanilla extract
- •1 tablespoon fresh lemon juice
Instructions
- 1
Place the strawberries, yogurt, honey, vanilla extract, and lemon juice into a blender.
- 2
Blend on high speed until the mixture is completely smooth and creamy.
- 3
Taste the mixture and add a little more honey if you prefer a sweeter popsicle.
- 4
Pour the mixture evenly into popsicle molds, leaving a small amount of space at the top for expansion.
- 5
Insert popsicle sticks into the center of each mold.
- 6
Place the molds in the freezer for at least 6 hours, or until the popsicles are frozen solid.
- 7
To unmold, run the outside of the popsicle molds under warm water for 10-15 seconds to help them slide out easily.
💡 Chef tips
- For a dairy-free version, substitute the Greek yogurt with full-fat coconut milk.
- You can add small pieces of fresh fruit into the molds before pouring the mixture for added texture and visual appeal.
- Store the finished popsicles in the freezer for up to two weeks; if they are hard to remove, always use the warm water trick.
✅ How it should turn out
The finished popsicles should have a smooth, creamy texture with a vibrant pink color and a perfectly balanced sweet-tart strawberry flavor.
