👥 8 servings⏱ Prep 15′🔥 Cook 30′⚡ 280 kcal per serving

Ingredients

  • •2 cups rolled oats (180g)
  • •1/2 cup slivered almonds (60g)
  • •1/2 cup chopped dried apricots (80g)
  • •1/4 cup sunflower seeds (35g)
  • •1/3 cup honey or maple syrup (110g)
  • •1/4 cup coconut oil, melted (60ml)
  • •1 teaspoon ground cinnamon
  • •1/4 teaspoon sea salt

Instructions

  1. 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch square baking pan with parchment paper.

  2. 2

In a large mixing bowl, combine the rolled oats, almonds, dried apricots, sunflower seeds, cinnamon, and salt.

  3. 3

In a separate small bowl, whisk together the melted coconut oil and honey until well combined.

  4. 4

Pour the wet ingredients over the dry mixture and stir thoroughly until every oat is evenly coated.

  5. 5

Transfer the mixture into the prepared baking pan and press down firmly using the back of a spatula to create a compact, even layer.

  6. 6

Bake for 25 to 30 minutes, or until the edges are golden brown and the center feels set.

  7. 7

Remove from the oven and allow the bars to cool completely in the pan before slicing into 8 rectangular bars.

💡 Chef tips

  • For a nut-free version, replace the almonds with an equal amount of pumpkin seeds or extra sunflower seeds.
  • Store these bars in an airtight container at room temperature for up to one week, or freeze them for up to three months.
  • If the bars are too crumbly, ensure you press the mixture into the pan very firmly before baking to help them bind together.

✅ How it should turn out

The finished bars should be golden-brown with a firm, chewy texture, smelling of toasted oats and warm cinnamon with a perfect balance of natural sweetness.
