Warm Hummus with Oil
Experience the ultimate comfort food with this velvety, warm hummus generously drizzled with rich olive oil and warm spices.
Ingredients
- •1 cup dry chickpeas (or 2 cans / 800g canned chickpeas, rinsed)
- •1 teaspoon baking soda (if using dry chickpeas)
- •1/2 cup high-quality tahini paste
- •1/4 cup fresh lemon juice
- •1-2 cloves garlic, minced
- •1/2 teaspoon ground cumin
- •1/2 cup ice-cold water
- •1 teaspoon salt (to taste)
- •1/3 cup extra-virgin olive oil
- •1 teaspoon paprika or sumac for serving
- •2 tablespoons chopped fresh parsley for garnish
Instructions
- 1
If using dry chickpeas, soak them overnight in plenty of water with 1 teaspoon of baking soda. Drain and rinse well, then place in a large pot, cover with fresh water, and boil for 25-30 minutes until exceptionally tender and easily mashed between your fingers.
- 2
If using canned chickpeas, gently warm them in a saucepan with a little water for 5 minutes, reserving a few whole chickpeas for the final garnish.
- 3
In a food processor, combine the tahini and fresh lemon juice and process for about 1 minute until the mixture becomes pale, thick, and whipped.
- 4
Add the minced garlic, ground cumin, and salt to the tahini mixture and process until smooth.
- 5
Add the drained, still-warm chickpeas to the food processor and blend on high speed for 2 to 3 minutes.
- 6
With the processor running, slowly drizzle in the ice-cold water one tablespoon at a time, continuing to blend until the hummus transforms into an ultra-smooth, creamy, and fluffy texture.
- 7
Transfer the warm hummus to a shallow serving bowl, creating a slight well or swirl in the center with the back of a spoon.
- 8
Top with the reserved whole chickpeas, a generous pool of extra-virgin olive oil, a sprinkle of paprika or sumac, and fresh chopped parsley before serving immediately.
💡 Chef tips
- Using dry chickpeas cooked from scratch yields the creamiest traditional texture, but high-quality canned chickpeas work wonderfully when you are short on time.
- Adding ice-cold water creates a thermal shock that fluffs up the tahini, resulting in a lighter, restaurant-style texture.
- Leftover hummus can be stored in an airtight container in the refrigerator for up to 4 days, though it is best served warm or brought to room temperature before eating.
✅ How it should turn out
The finished dish is luxuriously creamy and velvety smooth, smelling richly of toasted sesame and garlic, with a decadent pool of olive oil pooling on top.
