👥 4 servings⏱ Prep 15′🔥 Cook 30′⚡ 350 kcal per serving

Ingredients

  • •1 can (15 oz/425g) chickpeas, drained and rinsed
  • •1/3 cup (80ml) high-quality tahini
  • •1/4 cup (60ml) fresh lemon juice
  • •1 small garlic clove, minced
  • •1/2 teaspoon kosher salt
  • •1/4 cup (60ml) ice-cold water
  • •3 tablespoons extra virgin olive oil
  • •1/2 teaspoon smoked paprika
  • •1/4 teaspoon ground cumin
  • •1 tablespoon fresh parsley, chopped
  • •1 tablespoon toasted pine nuts (optional)

Instructions

  1. 1

Place the drained chickpeas in a small saucepan with just enough water to cover them. Simmer over medium heat for 15-20 minutes until they are very soft and skins begin to loosen.

  2. 2

Drain the chickpeas well, reserving a few whole ones for garnish if desired.

  3. 3

In a food processor, combine the warm chickpeas, tahini, lemon juice, minced garlic, and salt. Process until a thick paste forms.

  4. 4

With the processor running, slowly drizzle in the ice-cold water. Continue to process for 2-3 minutes until the hummus is exceptionally smooth and creamy.

  5. 5

Transfer the warm hummus to a shallow serving bowl and use the back of a spoon to create a decorative well in the center.

  6. 6

In a small skillet, gently heat the olive oil over low heat. Stir in the smoked paprika and cumin for 30 seconds until fragrant, then immediately remove from heat.

  7. 7

Pour the warm spiced oil over the hummus, garnish with the reserved chickpeas, fresh parsley, and toasted pine nuts, and serve immediately with warm pita bread.

💡 Chef tips

  • For the smoothest texture, peel the skins off the chickpeas after boiling them, though this is optional.
  • If you prefer a thicker consistency, reduce the amount of ice water added during blending.
  • Store leftover hummus in an airtight container in the refrigerator for up to 3 days; reheat gently in a microwave or double boiler before serving.

✅ How it should turn out

The dish should be incredibly silky and warm, with a vibrant, smoky aroma from the spiced oil and a perfectly balanced tangy, nutty flavor.
