Ingredients

  • •4 cups Napa cabbage, finely shredded (200g)
  • •2 cups purple cabbage, finely shredded (100g)
  • •1 cup shredded carrots (100g)
  • •3 green onions, thinly sliced
  • •1/4 cup slivered almonds, toasted (30g)
  • •1/4 cup sesame seeds, toasted (15g)
  • •1 cup crushed pareve ramen noodles or wonton strips (40g)
  • •1/4 cup neutral oil such as canola or grapeseed (60ml)
  • •2 tablespoons rice vinegar (30ml)
  • •1 tablespoon low-sodium soy sauce (15ml)
  • •1 tablespoon toasted sesame oil (15ml)
  • •1 tablespoon honey or maple syrup (20g)
  • •1 clove garlic, minced
  • •1 teaspoon fresh ginger, grated

Instructions

  1. 1

Preheat a small skillet over medium-low heat and toast the slivered almonds and sesame seeds for 3 to 5 minutes, stirring frequently until fragrant and golden, then set aside to cool.

  2. 2

In a small mixing bowl or mason jar, whisk together the neutral oil, rice vinegar, soy sauce, sesame oil, honey or maple syrup, minced garlic, and grated ginger until fully emulsified.

  3. 3

In a large salad bowl, combine the shredded Napa cabbage, purple cabbage, shredded carrots, and sliced green onions.

  4. 4

Pour the prepared dressing over the cabbage mixture just before serving and toss well to ensure all the vegetables are evenly coated.

  5. 5

Top the salad with the toasted almonds, sesame seeds, and crushed ramen noodles right before serving to maintain maximum crunch.

💡 Chef tips

  • For meal prep, keep the dressing and the crunchy toppings separate from the shredded cabbage until you are ready to serve to prevent the salad from getting soggy.
  • You can easily substitute the almonds with roasted cashews or sunflower seeds based on your preference or allergy needs.
  • Ensure the soy sauce and packaged ramen noodles are certified kosher pareve to keep the entire dish strictly pareve.

✅ How it should turn out

The finished salad is brilliantly colorful with a loud, satisfying crunch, offering a perfect balance of sharp, savory, and subtly sweet flavors from the sesame-ginger dressing.
