This vibrant and savory vegetable fried rice comes together quickly for a foolproof, restaurant-quality meal at home.
Ingredients
- •3 cups cooked white rice, chilled (700g)
- •2 tablespoons vegetable oil, divided (30ml)
- •2 large eggs, lightly beaten (100g)
- •1 cup frozen peas and carrots, thawed (150g)
- •1 small yellow onion, finely diced (100g)
- •2 cloves garlic, minced (6g)
- •1 teaspoon fresh ginger, grated (3g)
- •3 green onions, thinly sliced (30g)
- •3 tablespoons soy sauce (45ml)
- •1 tablespoon toasted sesame oil (15ml)
- •Salt and black pepper to taste
Instructions
- 1
Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- 2
Pour in the beaten eggs, scramble quickly until just set, then remove from the pan and set aside.
- 3
Add the remaining tablespoon of vegetable oil to the same skillet and turn the heat to high.
- 4
Add the diced onion, peas, and carrots, stirring frequently until the vegetables are tender and slightly caramelized.
- 5
Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
- 6
Add the chilled cooked rice to the skillet, breaking up any clumps with a spatula and tossing continuously for 3 to 4 minutes until heated through.
- 7
Return the scrambled eggs to the skillet, breaking them into smaller pieces.
- 8
Drizzle the soy sauce and toasted sesame oil evenly over the rice, tossing everything together until well combined and slightly crisp.
- 9
Stir in the sliced green onions, season with salt and pepper to taste, and remove from heat.
💡 Chef tips
- Always use day-old cold cooked rice for the best texture, as freshly cooked rice contains too much moisture and will make the dish soggy.
- You can easily customize this recipe by adding other vegetables you have on hand, such as diced bell peppers, broccoli florets, or baby corn.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a hot skillet with a splash of oil.
✅ How it should turn out
The finished vegetable fried rice should be aromatic with toasted sesame and garlic, featuring separate, non-soggy grains of rice coated in savory soy sauce with tender-crisp vegetables.
