Ingredients

  • •1 cup uncooked quinoa (170g), rinsed and drained
  • •2 cups vegetable broth (480ml)
  • •1 can full-fat coconut milk (400ml)
  • •1 tablespoon olive oil (15ml)
  • •1 medium yellow onion, finely diced
  • •2 cloves garlic, minced
  • •1 tablespoon fresh ginger, grated
  • •2 tablespoons yellow curry powder
  • •1 teaspoon ground cumin
  • •1/2 teaspoon turmeric
  • •1 medium sweet potato, peeled and cubed (approx. 2 cups)
  • •1 medium bell pepper, chopped
  • •2 cups fresh baby spinach
  • •1 cup frozen peas
  • •1 tablespoon fresh lime juice
  • •Salt and freshly ground black pepper to taste
  • •1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. 1

Heat the olive oil in a large skillet or saucepan over medium heat.

  2. 2

Add the diced onion and cook for 5 minutes until soft and translucent.

  3. 3

Stir in the minced garlic, grated ginger, curry powder, cumin, and turmeric, cooking for about 1 minute until fragrant.

  4. 4

Add the cubed sweet potatoes, chopped bell pepper, rinsed quinoa, vegetable broth, and coconut milk to the pan, stirring well to combine.

  5. 5

Bring the mixture to a gentle boil, then reduce the heat to low, cover with a lid, and simmer for 20 minutes.

  6. 6

Remove the lid and stir in the frozen peas and baby spinach, cooking for another 3 to 5 minutes until the spinach is wilted and the sweet potatoes are fork-tender.

  7. 7

Turn off the heat, stir in the fresh lime juice, and season with salt and pepper to taste.

  8. 8

Garnish with chopped fresh cilantro before serving.

💡 Chef tips

  • Substitute cubed butternut squash or carrots if you do not have sweet potatoes on hand.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days; the flavors actually deepen the next day.
  • Add grilled chicken or crispy tofu on top if you want to boost the protein content.

✅ How it should turn out

The finished dish should feature fluffy, tender grains of quinoa coated in a rich, golden curry sauce, perfectly balanced with sweet tender vegetables and a bright hint of lime.
