Vegan Energy Balls
These wholesome, no-bake vegan energy balls are packed with natural sweetness and nutty goodness for a quick and healthy snack.
Ingredients
- •1 cup pitted Medjool dates (175g)
- •1 cup raw almonds (150g)
- •1/2 cup unsweetened shredded coconut (40g)
- •2 tablespoons chia seeds (20g)
- •2 tablespoons natural peanut butter (30g)
- •1 teaspoon pure vanilla extract
- •1/4 teaspoon salt
- •1 tablespoon water if needed
Instructions
- 1
Place the raw almonds in a food processor and pulse until finely chopped.
- 2
Add the pitted Medjool dates, shredded coconut, chia seeds, peanut butter, vanilla extract, and salt to the food processor.
- 3
Process the mixture on high speed until it becomes sticky and completely combined, stopping to scrape down the sides as needed. If the mixture is too dry and crumbly, add water one teaspoon at a time.
- 4
Scoop out tablespoon-sized portions of the mixture and roll them firmly between your palms to form bite-sized balls.
- 5
Place the rolled energy balls on a parchment-lined plate and refrigerate for at least 30 minutes to firm up before serving.
💡 Chef tips
- You can substitute the almonds with walnuts or cashews, and the peanut butter with almond butter or sunflower seed butter.
- Store the energy balls in an airtight container in the refrigerator for up to two weeks, or freeze them for up to three months.
- For an extra flavor boost, roll the finished balls in additional shredded coconut or cacao powder.
✅ How it should turn out
The finished energy balls should be firm yet chewy, with a rich, nutty flavor, a natural sweetness from the dates, and a pleasant texture from the coconut and chia seeds.
