Ingredients

  • •1 medium zucchini, sliced into half-moons
  • •1 red bell pepper, chopped into 1-inch pieces
  • •1 medium yellow onion, chopped
  • •2 tablespoons olive oil
  • •1/2 teaspoon dried oregano
  • •9 no-boil lasagna noodles
  • •24 ounces (680g) high-quality marinara sauce
  • •15 ounces (425g) ricotta cheese
  • •2 cups (200g) shredded mozzarella cheese
  • •1/2 cup (50g) grated parmesan cheese
  • •1 large egg, lightly beaten
  • •1/4 cup fresh basil, chopped

Instructions

  1. 1

Preheat your oven to 400°F (200°C). Toss the zucchini, bell pepper, and onion with olive oil, oregano, salt, and pepper on a large baking sheet.

  2. 2

Roast the vegetables for 20 minutes until tender and slightly charred at the edges.

  3. 3

In a medium bowl, combine the ricotta cheese, beaten egg, and half of the fresh basil.

  4. 4

Spread a thin layer of marinara sauce on the bottom of a 9x9 inch baking dish.

  5. 5

Place 3 lasagna noodles over the sauce, top with a third of the ricotta mixture, a third of the roasted vegetables, a sprinkle of mozzarella, and more sauce.

  6. 6

Repeat the layers twice more, finishing with a generous layer of mozzarella and parmesan cheese on top.

  7. 7

Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.

  8. 8

Let the lasagna rest for 10 minutes before slicing to ensure the layers set properly.

💡 Chef tips

  • You can prepare the vegetable filling and ricotta mixture up to 24 hours in advance to save time on the day of cooking.
  • If you prefer a firmer texture, use regular lasagna noodles boiled for 2 minutes less than the package instructions instead of no-boil noodles.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven at 350°F until warmed through.

✅ How it should turn out

The finished lasagna should be golden and bubbling on top, with tender vegetables and perfectly cooked pasta that holds its shape when sliced, offering a savory, aromatic, and deeply comforting flavor.
