Rice Noodle Stir Fry
A vibrant and savory noodle stir-fry packed with tender vegetables and a perfectly balanced sauce.
Ingredients
- •8 oz (225g) flat rice noodles
- •3 tbsp vegetable oil, divided
- •2 cloves garlic, minced
- •1 tablespoon ginger, minced
- •1 cup broccoli florets
- •1 cup snap peas
- •1 red bell pepper, thinly sliced
- •2 cups napa cabbage, shredded
- •3 tablespoons soy sauce
- •1 tablespoon dark soy sauce
- •1 tablespoon rice vinegar
- •1 tablespoon brown sugar
- •1 tablespoon toasted sesame oil
- •2 green onions, chopped for garnish
Instructions
- 1
Soak the rice noodles in a large bowl of hot water according to package instructions until just tender, then drain and rinse with cold water.
- 2
In a small bowl, whisk together the soy sauce, dark soy sauce, rice vinegar, brown sugar, and toasted sesame oil until the sugar dissolves.
- 3
Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat.
- 4
Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.
- 5
Add the broccoli florets, snap peas, bell pepper, and napa cabbage to the wok, stir-frying for 4 to 5 minutes until crisp-tender.
- 6
Remove the vegetables from the wok and set them aside on a plate.
- 7
Add the remaining 1 tablespoon of vegetable oil to the same wok and add the drained rice noodles.
- 8
Pour the sauce mixture directly over the noodles and toss continuously for 2 minutes until the noodles absorb the sauce and turn an even brown color.
- 9
Return the cooked vegetables to the wok with the noodles and toss everything together for another minute until heated through.
- 10
Garnish with chopped green onions and serve immediately.
💡 Chef tips
- Do not over-soak the rice noodles, as they will finish cooking in the hot wok and can become mushy if soaked too long.
- Pre-chop all your vegetables before turning on the stove, as stir-frying happens very quickly.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a skillet with a splash of water.
✅ How it should turn out
The finished dish should feature glossy, chewy noodles coated in a savory-sweet glaze, mixed with vibrantly colored, crisp-tender vegetables.
