👥 4 servings⏱ Prep 15′🔥 Cook 30′⚡ 420 kcal per serving

Ingredients

  • •8 oz (225g) lo mein or egg-free wheat noodles
  • •12 oz (340g) flank steak or sirloin, thinly sliced against the grain
  • •2 tbsp vegetable oil, divided
  • •2 cups broccoli florets
  • •1 medium red bell pepper, thinly sliced
  • •3 cloves garlic, minced
  • •1 tbsp fresh ginger, grated
  • •3 tbsp soy sauce
  • •2 tbsp oyster sauce
  • •1 tsp sesame oil
  • •2 green onions, cut into 1-inch pieces

Instructions

  1. 1

Cook the noodles according to package instructions until al dente, drain, and rinse with cold water to stop the cooking.

  2. 2

In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil.

  3. 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.

  4. 4

Add the sliced beef and stir-fry for 3 to 4 minutes until browned and cooked through, then remove the beef and set aside on a plate.

  5. 5

Add the remaining tablespoon of oil to the same pan, then toss in the broccoli and red bell pepper.

  6. 6

Stir-fry the vegetables for 3 to 4 minutes until tender-crisp.

  7. 7

Add the minced garlic and grated ginger to the pan, cooking for about 30 seconds until fragrant.

  8. 8

Return the beef and drained noodles to the wok.

  9. 9

Pour the sauce mixture over the ingredients and toss everything continuously for 2 minutes until hot and evenly coated.

  10. 10

Stir in the green onions and remove from heat immediately before serving.

💡 Chef tips

  • Freeze the beef for 30 minutes before slicing to make it much easier to cut into thin, uniform strips.
  • You can easily swap the broccoli and bell peppers for snap peas, bok choy, or sliced carrots based on what you have in your fridge.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a hot skillet with a splash of water.

✅ How it should turn out

The finished dish should feature glossy, savory noodles coated in a rich umami sauce, perfectly paired with tender beef and crisp, vibrant vegetables.
