Lebanese Fattoush Salad
A vibrant, refreshing Middle Eastern bread salad tossed with crisp vegetables, aromatic herbs, and a tangy sumac dressing.
Ingredients
- •2 large pita bread rounds
- •3 tablespoons extra-virgin olive oil
- •1 teaspoon ground sumac
- •4 cups romaine lettuce, chopped
- •3 medium ripe tomatoes, diced
- •2 Persian cucumbers, diced
- •5 radishes, thinly sliced
- •4 green onions, thinly sliced
- •1 cup fresh parsley, chopped
- •1/2 cup fresh mint leaves, chopped
- •1/4 cup fresh purslane or arugula (optional)
- •1/4 cup extra-virgin olive oil (for dressing)
- •2 tablespoons fresh lemon juice
- •1 tablespoon pomegranate molasses
- •1 clove garlic, minced
- •1/2 teaspoon kosher salt
- •1/4 teaspoon freshly ground black pepper
Instructions
- 1
Preheat your oven to 375°F (190°C).
- 2
Brush the pita breads with 3 tablespoons of olive oil, sprinkle with sumac and a pinch of salt, then cut or tear them into bite-sized pieces.
- 3
Spread the pita pieces on a baking sheet and bake for 8 to 10 minutes until golden brown and crispy, then set aside to cool.
- 4
In a large salad bowl, combine the chopped romaine lettuce, diced tomatoes, diced cucumbers, sliced radishes, green onions, parsley, mint, and purslane if using.
- 5
In a small bowl, whisk together the dressing ingredients: 1/4 cup extra-virgin olive oil, fresh lemon juice, pomegranate molasses, minced garlic, kosher salt, and black pepper.
- 6
Just before serving, add the crispy pita chips to the salad bowl.
- 7
Pour the dressing over the salad and toss everything gently until all the vegetables and chips are well coated.
💡 Chef tips
- For the best texture, add the dressing and toasted pita chips right before serving so the bread retains its crunch.
- Pomegranate molasses can be found in Middle Eastern markets or the international aisle of most grocery stores and provides the signature sweet-tart balance.
- You can grill or toast the pita bread on a stovetop skillet with olive oil if you prefer not to use the oven.
✅ How it should turn out
The finished fattoush should look colorful and vibrant, smell intensely fresh with bright citrus and herbs, and taste wonderfully crisp, crunchy, and tangy.
