- •1 teaspoon vanilla extract
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon salt
- •1/3 cup dark chocolate chips (60g)
Instructions
- 1
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- 2
In a large mixing bowl, combine the mashed bananas, maple syrup, melted coconut oil, and vanilla extract until smooth.

Stir in the rolled oats, ground cinnamon, and salt until the oats are thoroughly coated and a sticky dough forms.
- 4
Fold in the dark chocolate chips gently.
- 5
Scoop out portions of the dough using a spoon and drop them onto the prepared baking sheet, leaving a little space between each cookie, then flatten them slightly with the back of the spoon.
- 6
Bake for 12 to 15 minutes, or until the edges are golden brown and set.
- 7
Remove from the oven and let the cookies cool completely on the baking sheet to firm up before serving.
💡 Chef tips
- You can substitute the dark chocolate chips with dried cranberries or raisins for a fruity twist.
- Store the cooled cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- Ensure your bananas are very ripe and speckled for natural sweetness and better binding.
✅ How it should turn out
The finished cookies should be golden brown around the edges, chewy in the center with a fragrant aroma of cinnamon and vanilla, and perfectly sweet.
