Ingredients

  • •2 tablespoons Thai green curry paste
  • •1 can full-fat coconut milk (13.5 oz / 400ml)
  • •1 cup vegetable broth (240ml)
  • •1 tablespoon soy sauce or tamari
  • •1 tablespoon coconut sugar or brown sugar
  • •1 medium eggplant, cubed
  • •1 red bell pepper, sliced
  • •1 cup broccoli florets
  • •1 zucchini, sliced into half-moons
  • •1 cup snap peas, trimmed
  • •1 tablespoon neutral oil or coconut oil
  • •1 lime, juiced
  • •1/2 cup fresh Thai basil leaves
  • •2 tablespoons chopped fresh cilantro

Instructions

  1. 1

Heat the oil in a large skillet or wok over medium heat.

  2. 2

Add the green curry paste and sauté for 1 to 2 minutes until fragrant and slightly darkened.

  3. 3

Pour in about 1/4 cup of the coconut milk from the top of the can where it is thickest, stirring constantly until the oil begins to separate from the paste.

  4. 4

Add the remaining coconut milk, vegetable broth, soy sauce, and coconut sugar, bringing the mixture to a gentle simmer.

  5. 5

Add the cubed eggplant and bell pepper, simmering for about 5 minutes until they begin to soften.

  6. 6

Add the broccoli, zucchini, and snap peas, cooking for another 5 to 7 minutes until all vegetables are tender-crisp.

  7. 7

Remove the skillet from the heat and stir in the fresh lime juice, Thai basil leaves, and cilantro.

  8. 8

Serve hot over steamed jasmine rice.

💡 Chef tips

  • You can easily customize the vegetable mix based on what is in your fridge, such as adding baby corn, bamboo shoots, or spinach.
  • Store leftover curry in an airtight container in the refrigerator for up to 3 days; flavors deepen even more on the second day.
  • Make sure to use a certified kosher Thai green curry paste, as some imported brands may contain non-kosher ingredients like shrimp paste.

✅ How it should turn out

The finished curry should be richly aromatic with a vibrant green hue, offering a creamy coconut texture balanced by a zesty, savory, and mildly spicy flavor profile.
