Arab Eggplant Musakhan
A vibrant, plant-based twist on the classic Palestinian dish, featuring tender roasted eggplant spiced with sumac and caramelized onions served over toasted flatbread.
Ingredients
- •2 large eggplants, cut into 1-inch cubes
- •4 large yellow onions, thinly sliced
- •1/2 cup extra virgin olive oil
- •3 tablespoons sumac
- •1 teaspoon ground cumin
- •1/2 teaspoon ground cinnamon
- •4 pieces of Taboon or pita bread
- •1/4 cup toasted pine nuts
- •1/4 cup fresh parsley, chopped
- •Salt and black pepper to taste
Instructions
- 1
Preheat your oven to 400°F (200°C). Toss the cubed eggplant with 3 tablespoons of olive oil, salt, and pepper on a baking sheet and roast for 20-25 minutes until golden and tender.
- 2
While the eggplant roasts, heat the remaining olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, for 15-20 minutes until they are deeply caramelized and soft.
- 3
Stir the sumac, cumin, and cinnamon into the onions, then add the roasted eggplant to the skillet. Toss gently to combine and cook for another 2 minutes to let the flavors meld.
- 4
Briefly toast the flatbreads in the oven or on a hot griddle until crisp.
- 5
To serve, place a piece of flatbread on each plate, top generously with the eggplant and onion mixture, and garnish with toasted pine nuts and fresh parsley.
💡 Chef tips
- To save time, you can caramelize the onions a day in advance and store them in the refrigerator.
- If you prefer a heartier meal, you can add cooked chickpeas to the eggplant mixture for extra protein.
- Ensure you use high-quality sumac, as its tart, lemony flavor is the defining characteristic of this dish.
✅ How it should turn out
The dish should feature deeply caramelized, jammy onions and tender eggplant, fragrant with the earthy scent of sumac and cinnamon, served over crisp, oil-kissed bread.
