Sweet Couscous Dessert
A delightful and aromatic Moroccan-inspired sweet couscous, perfectly balanced with dried fruits, toasted nuts, and a hint of cinnamon.
Ingredients
- •1.5 cups dry couscous (approx. 250g)
- •1.5 cups boiling water or unsweetened almond milk
- •2 tablespoons pareve margarine or coconut oil
- •1/2 cup golden raisins
- •1/2 cup chopped dried apricots
- •1/2 cup toasted slivered almonds
- •1/4 cup honey or agave syrup
- •1 teaspoon ground cinnamon
- •1/2 teaspoon ground cardamom
- •1/4 teaspoon salt
Instructions
- 1
Place the dry couscous in a large heat-proof bowl and stir in the salt, cinnamon, and cardamom.
- 2
Pour the boiling water or hot almond milk over the couscous, cover the bowl tightly with plastic wrap or a lid, and let it sit undisturbed for 10 minutes.
- 3
While the couscous steams, melt the margarine or coconut oil in a small pan over medium heat and lightly sauté the raisins and apricots for 2 minutes until they plump up.
- 4
Remove the cover from the couscous and fluff it gently with a fork to break up any clumps.
- 5
Fold in the sautéed fruit mixture, honey or agave, and half of the toasted almonds.
- 6
Transfer to a serving platter and garnish with the remaining toasted almonds and an extra sprinkle of cinnamon before serving warm.
💡 Chef tips
- For a more decadent texture, you can replace the water with full-fat coconut milk.
- This dish can be prepared up to 24 hours in advance and kept in the refrigerator; simply reheat gently in the microwave with a splash of water to restore moisture.
- Feel free to swap the dried fruits for chopped dates or dried cranberries depending on your preference.
✅ How it should turn out
The finished dish should be light, fluffy, and fragrant with warm spices, offering a perfect harmony of chewy dried fruits and crunchy toasted almonds.
