Ingredients

  • •8 oz (225g) lo mein or egg noodles
  • •12 oz (340g) flank steak, thinly sliced against the grain
  • •2 tbsp vegetable oil, divided
  • •2 cloves garlic, minced
  • •1 tsp fresh ginger, grated
  • •1 cup broccoli florets
  • •1 medium bell pepper, sliced into thin strips
  • •1 cup snap peas
  • •3 tbsp soy sauce
  • •1 tbsp dark soy sauce
  • •1 tbsp oyster sauce
  • •1 tsp sesame oil
  • •1 tbsp cornstarch
  • •2 green onions, chopped

Instructions

  1. 1

Cook the noodles according to package instructions until al dente, then drain and rinse with cold water.

  2. 2

In a small bowl, whisk together the soy sauce, dark soy sauce, oyster sauce, sesame oil, and cornstarch until smooth.

  3. 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  4. 4

Add the sliced beef and stir-fry for 3 to 4 minutes until browned and cooked through, then remove the beef from the skillet and set aside.

  5. 5

Add the remaining tablespoon of oil to the same skillet.

  6. 6

Add the minced garlic, grated ginger, broccoli florets, bell pepper, and snap peas, and stir-fry for 3 to 5 minutes until the vegetables are tender-crisp.

  7. 7

Return the cooked beef and the drained noodles to the skillet with the vegetables.

  8. 8

Pour the sauce mixture evenly over the contents of the skillet.

  9. 9

Toss everything together continuously for 2 minutes until the sauce thickens and coats the noodles and beef evenly.

  10. 10

Garnish with chopped green onions and serve hot.

💡 Chef tips

  • Slice the beef slightly partially frozen to make cutting thin, even strips much easier.
  • You can easily swap the vegetables for whatever you have in your fridge, such as bok choy, carrots, or mushrooms.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a skillet with a splash of water.

✅ How it should turn out

The finished dish should feature glossy, perfectly coated noodles with tender, savory beef and crisp, vibrant vegetables, releasing a rich aroma of soy and sesame.
