Kids Quesadilla
A delightfully cheesy, crispy, and kid-friendly quesadilla that comes together in minutes for a perfect snack or quick meal.
Ingredients
- •4 large flour tortillas
- •2 cups shredded cheddar and mozzarella cheese blend (200g)
- •1/2 cup canned black beans, rinsed and drained (optional)
- •2 tablespoons unsalted butter, melted (or olive oil)
Instructions
- 1
Lay two flour tortillas flat on a clean cutting board.
- 2
Sprinkle half of the shredded cheese evenly over each tortilla, leaving a small border around the edge.
- 3
Add the black beans evenly over the cheese if using, then top with the remaining cheese.
- 4
Place the remaining two tortillas on top of the filling to form two complete sandwiches.
- 5
Heat a large skillet or griddle over medium heat and brush lightly with melted butter or olive oil.
- 6
Carefully place one quesadilla into the skillet and cook for 3 to 4 minutes until the bottom is golden brown and crispy.
- 7
Flip the quesadilla carefully and cook for another 3 minutes until the cheese is completely melted and both sides are golden brown.
- 8
Repeat the process with the second quesadilla, adding more butter or oil to the pan as needed.
- 9
Transfer the quesadillas to a cutting board, slice each into four wedges, and serve warm.
💡 Chef tips
- You can easily swap the cheese for your child's favorite melting cheese, or add finely diced cooked chicken for extra protein.
- Assemble the quesadillas ahead of time, store them in the refrigerator covered in plastic wrap, and cook them fresh when hungry.
- Leftover cooked quesadilla wedges can be stored in an airtight container in the fridge for up to 2 days and reheated in a toaster oven or skillet to restore crispiness.
✅ How it should turn out
The finished quesadilla should have a beautifully golden-brown, crispy exterior and oozy, melted cheese inside that pulls apart with every bite.
