Healthy Oat Cookies
These wholesome, naturally sweetened oat cookies are chewy, satisfying, and easy to whip up for a guilt-free treat.
Ingredients
- •2 cups rolled oats (180g)
- •2 ripe bananas, mashed
- •1/4 cup pure maple syrup (60ml)
- •1/4 cup melted coconut oil (60ml)
- •1 teaspoon vanilla extract
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon salt
- •1/3 cup dark chocolate chips (60g)
Instructions
- 1
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- 2
In a large bowl, mash the ripe bananas thoroughly with a fork until mostly smooth.
- 3
Add the maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt to the mashed bananas, stirring well to combine.
- 4
Stir in the rolled oats until they are completely coated and no dry patches remain.
- 5
Fold in the dark chocolate chips gently.
- 6
Scoop out portions of the dough using a cookie scoop or spoon, and drop them onto the prepared baking sheet, flattening them slightly as they do not spread much while baking.
- 7
Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden brown and set.
- 8
Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
💡 Chef tips
- You can swap the dark chocolate chips for dried cranberries, raisins, or chopped nuts depending on your preference.
- Store leftover cookies in an airtight container at room temperature for up to 3 days, or freeze them for up to a month.
- Make sure your bananas are very ripe and speckled with brown spots for the best natural sweetness and moisture.
✅ How it should turn out
The finished cookies are delightfully chewy with a warm cinnamon aroma, perfectly balanced sweetness, and pockets of melted chocolate.
