Baked Tofu with Vegetables
A vibrant, healthy, and satisfying sheet-pan dinner featuring crispy baked tofu and tender-crisp roasted vegetables tossed in a savory glaze.
Ingredients
- •14 oz extra firm tofu (400g), drained, pressed, and cut into bite-sized cubes
- •2 cups broccoli florets (200g)
- •1 large bell pepper, cut into chunks
- •1 medium zucchini, sliced into half-moons
- •2 tbsp olive oil (30ml)
- •3 tbsp soy sauce or tamari (45ml)
- •1 tbsp maple syrup or honey (15ml)
- •1 tsp garlic powder (3g)
- •1 tsp ginger powder (3g)
- •1 tbsp cornstarch (8g)
- •1/2 tsp salt (3g)
- •1/4 tsp black pepper (1g)
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- 2
Pat the pressed tofu cubes very dry with paper towels to ensure maximum crispiness.
- 3
In a small bowl, whisk together the olive oil, soy sauce, maple syrup, garlic powder, ginger powder, salt, and black pepper.
- 4
Place the tofu cubes in a medium bowl, sprinkle the cornstarch over them, and toss gently until lightly coated.
- 5
Arrange the tofu cubes and the prepared vegetables (broccoli, bell pepper, and zucchini) in a single layer on the prepared baking sheet.
- 6
Drizzle the prepared sauce evenly over the tofu and vegetables, then toss everything gently to ensure even coating.
- 7
Bake in the preheated oven for 25 to 30 minutes, stirring halfway through, until the vegetables are tender and caramelized and the tofu edges are golden and crisp.
- 8
Remove from the oven, let cool for a few minutes, and serve warm.
💡 Chef tips
- For extra crispy tofu, press it for at least 20 minutes before cutting to remove excess moisture.
- You can easily swap the vegetables for whatever seasonal produce you have on hand, such as asparagus, mushrooms, or sweet potato cubes.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a toaster oven or skillet.
✅ How it should turn out
