Zucchini Latkes
These crispy, golden zucchini latkes are a delicious, lighter twist on the traditional potato holiday classic.
Ingredients
- •3 medium zucchinis (about 1.5 lbs / 700g), trimmed and coarsely grated
- •1 teaspoon kosher salt (plus extra for draining)
- •2 large eggs, lightly beaten
- •1/3 cup all-purpose flour (40g) or matzo meal
- •3 green onions, finely chopped
- •1/4 cup grated Parmesan cheese or crumbled feta (optional)
- •1/4 cup fresh dill or parsley, chopped
- •1/4 teaspoon freshly ground black pepper
- •1/3 cup neutral oil for frying, such as canola or grapeseed
Instructions
- 1
Place the grated zucchini in a colander in the sink and toss with 1 teaspoon of kosher salt. Let it sit for 10 minutes to draw out excess moisture.
- 2
Transfer the salted zucchini to a clean kitchen towel or cheesecloth. Squeeze as hard as you can to wring out as much liquid as possible; the drier the zucchini, the crispier the latkes will be.
- 3
Transfer the squeezed zucchini to a large bowl and add the eggs, flour, green onions, cheese, herbs, and black pepper. Stir well until a cohesive batter forms.
- 4
Heat about 3 tablespoons of neutral oil in a large skillet over medium-high heat until shimmering.
- 5
Drop spoonfuls of the zucchini mixture (about 2 tablespoons per latke) into the hot oil, flattening them slightly with the back of a spatula.
- 6
Fry for 3 to 4 minutes per side, until golden brown and crispy at the edges.
- 7
Transfer the cooked latkes to a paper towel-lined plate or a wire rack to drain, and repeat with the remaining batter, adding more oil to the pan as needed.
💡 Chef tips
- Squeezing out every drop of water from the zucchini is the secret to preventing soggy latkes.
- Keep cooked latkes warm on a wire rack set inside a baking sheet in a 200°F (90°C) oven while you finish frying the remaining batches.
- Serve hot with a dollop of sour cream or Greek yogurt mixed with a squeeze of lemon juice and fresh herbs.
✅ How it should turn out
The finished zucchini latkes should be deeply golden and shatteringly crispy on the outside, tender on the inside, and bursting with fresh garden flavor.
