Ingredients
- •4 boneless, skinless chicken breasts
- •2 cups fresh baby spinach, chopped
- •4 oz cream cheese, softened
- •1/2 cup shredded mozzarella cheese
- •1/4 cup grated Parmesan cheese
- •2 cloves garlic, minced
- •1 teaspoon Italian seasoning
- •2 tablespoons olive oil
- •1/2 teaspoon salt
- •1/2 teaspoon black pepper
- •1/2 teaspoon paprika
Instructions
- 1
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- 2
In a small bowl, combine the softened cream cheese, mozzarella, Parmesan, chopped spinach, minced garlic, and Italian seasoning until well mixed.
- 3
Using a sharp knife, cut a horizontal pocket into the thickest part of each chicken breast, being careful not to cut all the way through to the other side.
- 4
Stuff each chicken breast evenly with the spinach and cheese mixture, then secure the opening with toothpicks if necessary.
- 5
Rub the outside of the chicken breasts with olive oil and season both sides with salt, pepper, and paprika.
- 6
Place the chicken in the prepared baking dish and bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- 7
Remove the toothpicks and let the chicken rest for 5 minutes before serving.
💡 Chef tips
- For extra flavor, sear the chicken in a hot skillet for 2 minutes per side before transferring to the oven to bake.
- You can prepare the stuffed chicken ahead of time and keep it in the refrigerator for up to 4 hours before baking.
- If you prefer a crunchier texture, sprinkle a tablespoon of panko breadcrumbs over the top of the chicken before baking.
✅ How it should turn out
The chicken should be golden brown on the outside with a molten, savory cheese and spinach center that is perfectly tender and aromatic.
