Date Nut Energy Balls
These naturally sweet and chewy energy balls are the perfect wholesome snack to keep you fueled throughout the day.
Ingredients
- •1.5 cups pitted Medjool dates (approx. 250g)
- •1 cup raw walnuts or almonds (120g)
- •1/4 cup unsweetened shredded coconut (20g)
- •1 tablespoon chia seeds
- •1/2 teaspoon ground cinnamon
- •1 pinch sea salt
Instructions
- 1
Place the pitted dates in a food processor and pulse until they form a thick, sticky paste.
- 2
Add the walnuts or almonds, chia seeds, cinnamon, and sea salt to the processor.
- 3
Pulse the mixture repeatedly until the nuts are finely chopped and well-incorporated into the dates, stopping before it turns into a nut butter.
- 4
Scoop about one tablespoon of the mixture at a time and roll firmly between your palms to form small, uniform balls.
- 5
Optional: Roll the finished balls in the shredded coconut for an extra layer of texture and flavor.
- 6
Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.
💡 Chef tips
- If your dates feel dry, soak them in warm water for 10 minutes and drain thoroughly before processing.
- You can swap walnuts for pecans or cashews depending on your preference.
- Store these in an airtight container in the refrigerator for up to two weeks or in the freezer for up to three months.
✅ How it should turn out
The finished balls should be firm yet chewy, smelling of toasted nuts and warm cinnamon, with a rich, caramel-like sweetness from the dates.
