Bulgur Kubbeh
A classic Middle Eastern comfort dish featuring a crispy, golden bulgur shell filled with a savory, spiced ground meat mixture.
Ingredients
- •1.5 cups fine bulgur wheat
- •1 cup warm water
- •1 lb (450g) ground beef or lamb
- •1 large onion, finely diced
- •1/4 cup pine nuts, toasted
- •1 teaspoon ground allspice
- •1/2 teaspoon ground cinnamon
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •2 tablespoons all-purpose flour
- •Vegetable oil for deep frying
Instructions
- 1
Soak the bulgur in warm water for 15 minutes until soft, then drain well and squeeze out excess moisture.
- 2
In a skillet, brown half of the ground meat with the diced onion until cooked through; stir in the pine nuts, allspice, cinnamon, salt, and pepper, then set aside to cool.
- 3
In a bowl, combine the soaked bulgur with the remaining raw ground meat and flour, kneading by hand until a smooth, dough-like consistency forms.
- 4
Take a golf-ball-sized portion of the bulgur dough, flatten it in your palm, place a teaspoon of the cooked meat filling in the center, and seal it into an oval or torpedo shape.
- 5
Heat about 2 inches of oil in a deep pot to 350°F (175°C).
- 6
Fry the kubbeh in batches for 5-7 minutes until they are deep golden brown and crispy, then drain on paper towels.
💡 Chef tips
- Keep a bowl of cold water nearby to wet your hands while shaping the kubbeh; this prevents the dough from sticking to your skin.
- You can prepare the kubbeh ahead of time and freeze them raw on a tray before transferring to a freezer bag for up to one month.
- Serve with a side of creamy tzatziki or tahini sauce to balance the rich, spiced meat filling.
✅ How it should turn out
The finished kubbeh should have a perfectly crunchy, nutty exterior that gives way to a tender, aromatic, and savory spiced meat center.
