- •4 sea bass fillets (about 6 oz each)
- •3 tablespoons unsalted butter, melted
- •2 tablespoons extra virgin olive oil
- •3 cloves garlic, minced
- •1 tablespoon fresh lemon juice
- •1 teaspoon lemon zest
- •1 tablespoon fresh parsley, finely chopped
- •1 teaspoon dried oregano
- •1/2 teaspoon sea salt

- •1 lemon, thinly sliced
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2
Pat the sea bass fillets dry with paper towels to ensure they roast rather than steam.
- 3
In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, parsley, oregano, salt, and pepper.
- 4
Place the fillets on the prepared baking sheet and brush the herb butter mixture generously over the top of each piece.
- 5
Arrange the lemon slices on top of the fillets.
- 6
Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork.
- 7
Remove from the oven and serve immediately with the pan juices drizzled over the top.
💡 Chef tips
- If you cannot find sea bass, halibut or cod are excellent substitutes that hold up well to this baking method.
- For extra flavor, let the fish marinate in the herb mixture for 15 minutes in the refrigerator before baking.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently in the oven.
✅ How it should turn out
The finished sea bass should be tender and flaky with a golden, buttery crust that smells fragrant with garlic and lemon.
