Ingredients
- •1 lb white fish fillets such as cod or tilapia (450g)
- •1 large egg, lightly beaten
- •1/2 cup plain breadcrumbs (60g), plus extra for coating
- •2 green onions, finely chopped
- •2 tablespoons fresh parsley, chopped
- •1 tablespoon lemon juice
- •1 teaspoon dijon mustard
- •1/2 teaspoon garlic powder
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •2 tablespoons olive oil
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and line a baking sheet with parchment paper.
- 2
Pat the fish fillets completely dry with paper towels and finely chop them into very small pieces using a sharp knife.
- 3
In a large mixing bowl, combine the chopped fish, beaten egg, breadcrumbs, green onions, parsley, lemon juice, dijon mustard, garlic powder, salt, and black pepper until well mixed.
- 4
Divide the mixture into 8 equal portions and shape them gently into round patties with your hands.
- 5
Lightly press both sides of each patty into a little extra breadcrumbs to create a crisp exterior.
- 6
Place the patties onto the prepared baking sheet and drizzle or brush the tops lightly with olive oil.
- 7
Bake for 25 to 30 minutes, flipping halfway through, until the patties are golden brown, crisp on the edges, and cooked through in the center.
💡 Chef tips
- You can prepare the patties a few hours in advance, cover them, and keep them in the refrigerator until you are ready to bake.
- Leftover baked fish patties can be stored in an airtight container in the fridge for up to 3 days and gently reheated in a toaster oven.
- Serve these patties warm with a side of lemon wedges and homemade tartar sauce.
✅ How it should turn out
The finished fish patties should be golden and crisp on the outside, tender and flaky on the inside, with a fresh, savory aroma of herbs and lemon.
