What happens when food-safety chemicals react with food?

Recent foodborne outbreaks highlight the limits of industrial produce washing, such as triple-washing methods used for leafy greens. While these processes reduce surface contamination, they cannot eliminate deeply embedded pathogens. Furthermore, the chemical disinfectants applied during industrial processing can interact with the food matrix itself. This reaction potentially generates novel compounds whose long-term health implications remain largely unstudied.
