Green Pea Soup
This vibrant and comforting green pea soup comes together quickly with pantry-friendly frozen peas and fresh aromatics.
Ingredients
- •2 tablespoons unsalted butter (or olive oil for a vegan option)
- •1 medium yellow onion, diced
- •2 cloves garlic, minced
- •2 stalks celery, sliced
- •4 cups low-sodium vegetable or chicken broth (960ml)
- •4 cups frozen green peas, thawed (600g)
- •2 tablespoons fresh mint leaves, chopped
- •1/2 cup heavy cream or full-fat coconut milk (120ml), optional
- •Salt and freshly ground black pepper to taste
Instructions
- 1
Melt the butter in a large pot over medium heat, then add the diced onion, minced garlic, and sliced celery.
- 2
Sauté the vegetables stirring frequently for about 6 to 8 minutes until they are softened and translucent, but not browned.
- 3
Pour in the vegetable or chicken broth and bring the mixture to a gentle boil over high heat.
- 4
Add the frozen green peas and chopped mint leaves to the pot, then reduce the heat to a simmer.
- 5
Cook for about 4 to 5 minutes until the peas are bright green and tender, making sure not to overcook them to keep the vibrant color.
- 6
Remove the pot from the heat and use an immersion blender to puree the soup until completely smooth and velvety.
- 7
Stir in the heavy cream or coconut milk if using, and season generously with salt and black pepper to taste.
- 8
Ladle the warm soup into bowls and garnish with a few extra fresh mint leaves or a drizzle of olive oil before serving.
💡 Chef tips
- For the brightest green color, do not cover the pot while simmering the peas and blend the soup immediately after cooking.
- You can make this soup up to three days in advance and store it in an airtight container in the refrigerator; reheat gently on the stovetop without letting it boil.
- To add a slight tang, swirl a spoonful of Greek yogurt or creme fraiche into each bowl right before serving.
✅ How it should turn out
The finished soup should be silky and vibrant green with a sweet, fresh pea flavor lifted by aromatic mint and garlic.
